The sample menu has raw scallops with peanut milk and green tomatoes, aubergine with shiso and berries, rice with mussels and potatoes, and trout with fennel and herbs. That offers a substantial pescatarian route with bright flavours; butter, cream and sauces still need checking. Published Wednesday hours are 6–9:30 p.m. London.
