The Japanese restaurant at 135 West 42nd Street opens today. Its official menu offers an 11-course seasonal tasting at $265 and a five-course selection menu at $175, before drinks, tax and tip. The current harvest menu includes persimmon with shimeji in tofu cream, an eight-grain zōsui with shirasu, abalone sōmen with uni sauce, and dry-aged guinea fowl presented through yakitori cuts.
The provisional call is to watch rather than rush the first service. The more flexible $175 menu is the sensible diagnostic: it should reveal whether the “72 microseasons” idea produces lucid cooking or a great deal of concept around dinner. Opening-day operation is verified; live table inventory and settled independent criticism are not. Official site · Official menu
