Daniel Humm's new West Village restaurant, Humm, opens October 10 at 435 Hudson Street; reservations opened October 1. The à la carte menu is built around seasonal produce, much of it from Magic Farms, but it is not vegan: coverage includes whole branzino and chicken, while red meat is excluded.
